The Auberge offers classic Languedoc cuisine made using local produce and organically grown vegetables, flowers and herbs from its garden. To accompany your meal we have teas made using herbs from the garden, and the renowned wines produced from the Abbey?s ancient vines. The dishes are very natural, colourful and tasty. Example daily menu subject to produce available in the garden and on the market: - starter: Pélardon cheese and fig crêpe, served on a bed of flower salad from the garden; - main: grilled lamb with thyme jelly and candied pumpkin and parsnips from the garden; - dessert: roasted apple with savory served with jelly made from grapes from the estate?s vines.A rustic setting within a Cistercian abbey where you can sample gourmet southern French cuisine and/or organise a dinner, meeting, seminar, conference or tasting.
